Bitter Leaf is a leafy green vegetable that come from the bitter leaf shrub (or Vernonia amygdalina). As the name implies, it is bitter in taste and has thoroughly washed to reduce the bitter taste. The Bitter Leaf contains various nutrients but it is principally known as a medicinal herb used in treating stomach ache and fevers. It is very high in fibre and aids digestive health.
This recipe uses a pre-made Bitter Leaf Soup mix for added convenience. Adjust the ingredients and seasonings to suit your taste.
Ingredients
- Bitter Leaf Soup Kit
- One glass of Water (30cl)
- Dried fish or other condiments of choice
- Cooked protein
- Salt
Directions
- Heat the palm oil over medium heat.
- Add the Bitter Leaf Soup mix to the pot and stir it into the oil.
- Allow it to cook for 5 minutes while stirring to prevent burning.
- Add in the water. If the soup mix is too thick, add a little more water or broth to reach your desired texture.
- Add your salt and protein.
- Season the soup with pepper and other optional seasonings, like ground crayfish or seasoning cubes, adjusting the seasoning to your taste.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Cover and let it cook for about 15 minutes.
Options
- Use any oils of your choice if you do not wish to use the included palm oil.
- Add extra Bitter Leaf or other leafy vegetables of your choice, such as spinach, which will tone down the taste of Bitter Leaf.
