Egusi is the native name for the seed from the white or bitter melon. The seeds are picked from the fruit, dried and peeled to reveal a white inner seed which is then ground into a powder or paste. Egusi is high in proteins, healthy fats, vitamins, minerals and anti-oxidants.

This recipe uses a pre-made Egusi soup mix. You can adjust the ingredients and seasonings to suit your taste.

Ingredients

  • Egusi Soup Kit
  • One glass of Water (30cl)
  • Dried fish or other condiments of choice
  • Cooked protein
  • Salt

Directions

  1. Heat the palm oil over medium heat.
  2. Add the Egusi soup mix to the pot and stir it into the oil.
  3. Allow it to cook for 5 minutes while stirring to prevent burning.
  4. Mix in the water. If it is too thick, add a little more water or broth to reach your desired texture.
  5. Add your protein and salt.
  6. Add any other seasonings of your choice: pepper, ground crayfish, seasoning cubes. Adjust the seasoning to your taste.
  7. Bring the mixture to a boil, then reduce the heat to a simmer.
  8. Cover and let cook for about 15 minutes.

Options

  • Use any oils of your choice apart from the included palm oil.
  • Add extra leafy vegetables such as spinach for extra flavour.

Enjoy your delicious homemade Egusi soup with a side of fufu, pounded yam, rice, or any other preferred accompaniment.
