Egusi is the native name for the seed from the white or bitter melon. The seeds are picked from the fruit, dried and peeled to reveal a white inner seed which is then ground into a powder or paste. Egusi is high in proteins, healthy fats, vitamins, minerals and anti-oxidants.
This recipe uses a pre-made Egusi soup mix. You can adjust the ingredients and seasonings to suit your taste.
Ingredients
- Egusi Soup Kit
- One glass of Water (30cl)
- Dried fish or other condiments of choice
- Cooked protein
- Salt
Directions
- Heat the palm oil over medium heat.
- Add the Egusi soup mix to the pot and stir it into the oil.
- Allow it to cook for 5 minutes while stirring to prevent burning.
- Mix in the water. If it is too thick, add a little more water or broth to reach your desired texture.
- Add your protein and salt.
- Add any other seasonings of your choice: pepper, ground crayfish, seasoning cubes. Adjust the seasoning to your taste.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Cover and let cook for about 15 minutes.
Options
- Use any oils of your choice apart from the included palm oil.
- Add extra leafy vegetables such as spinach for extra flavour.
