Banga Jollof! (Ofe Akwu)

Banga has been touted as one of the 10 best soups in the world. (CNN Travel Report) But have you every heard of the banga jollof where banga is eaten with rice rather than the traditional start of fufu. Banga Jollof is very similar to naïve jollof rice where palm oil is used giving it a taste similar to soup and every bit as tasty.

 

EazyNaijaFoods does two varieties of banga soup. A banga soup meal kit in a large pack and a ready made banga soup in a sachet. Today we will show how we can use the banga sachet to make a quick and easy banga rice.

 

Ingredients

1 200g Sachet Banga Soup

Easy Cook Rice (1 cup/130grams)

Hot Water (2 cups/ 450 ml)

Seafood/dried fish  (Optional)

Salt/Stock powder  to taste

 

Method

Soak rice in hot water for 5 mins. Rinse in cold water and drain off any excess water.

Pour Banga Soup into pot and allow to heat up for about 1 minute.

Stir in the rice until the sauce and rice are properly mixed.

Add 1 and a half cup of water and bring to the boil.

Once boiled, turn down heat to the lowest level and allow rice to steam for 15mins.

After 15mins, stir rice properly and taste.

If rice is still hard, add the rest of the water and allow to steam for 10 more minutes.

If no water is added, allow rice steam for 5 more minutes.

Add salt to taste or if required pinch of stock powder

 

Serve Banga jollof with meat chicken or fish and/or steamed vegetables or a side salad.
